Granola Just The Way You Like It

Granola is one of those things that everyone should know how to make. Not only is it delicious and good for you, but making your own granola can save you money and let you customize your recipe to your personal favorite flavors. With this recipe, you can mix and match the kind of nuts, sweetener, oil, and fruits for an infinite number of granola recipes.

1 ½ cups gluten-free rolled oats
1 ½ cups nuts of choice (almonds, cashews, pecans, etc.)
⅓ cup sweetener (maple syrup, honey, brown sugar, agave, etc.)
3 tbsp oil (coconut oil, olive oil, butter, avocado oil, etc.)
1 tsp vanilla
1 tbsp seasoning, optional (cinnamon, citrus zest)
Pinch of salt
½ cup dried fruit

Preheat oven to 350 degrees and line a sheet pan with parchment paper. Combine the oats and nuts in a large bowl. In a separate small bowl, microwave oil and sweetener together (about 30 seconds on high) until melted and stir to combine. Add the vanilla, pinch of salt and seasoning (if using) and give one more stir. Pour the sweetener mixture over the oat and nut mixture and mix until all of the oats and nuts are evenly covered by the sweetener mixture. Pour out onto the lined sheet pan and spread out evenly. Bake for 15 minutes, remove from the oven and toss the granola around, this will prevent some areas from getting burnt and other areas not getting cooked. Cook for 15 more minutes or until the granola is evenly browned. Let the granola cool, and then add in your favorite dried fruit. Serve on top of yogurt, smoothie bowls, with milk, or just eat it plain! Make sure to store your granola in an airtight container to keep its crunch for up to two weeks.

Pistachio Honey (pistachios, honey, olive oil, orange zest, dried cherries)
Coconut Almond (almonds, unsweetened coconut flakes, coconut oil, coconut sugar)
